Which three words would you use to describe yourself?
Big, bald and easily-distracted.

What did you want to be when you grew up?
A spaceman, a cricketer, a rugby player, a footballer, a racing car driver, an Oscar-winning actor – and a chef!

What is your philosophy when it comes to food and hospitality?
I’m a big believer that food brings people together in a space where they can enjoy not just the flavours, but the company they’re with. I don’t go in for that ‘temple of gastronomy’ thing – I just want people to have a nice time, and that includes the warmth of hospitality.

What would you choose for your last meal?
Fish and chips with a can of Lilt.

Honest, friendly and fair.

What did you want to be when you grew up?
An air hostess, a biotechnologist or a jobless traveller. I failed at all three!

What is your philosophy of hospitality?
If you love it, it will give you back every effort that you put in and every hour that you have worked for. There’s a huge sense of achievement at the end of every day. Your colleagues can become your friends and family. It’s a way of life.

What makes a great pub?
A good landlord, a good pint, good customers and smiley, down-to-earth staff.

Forensic Scientist.

Focus on top quality produce, using the best of the best and treating it with love and patience.

A great pub should be like your front room at home.
